Brussel sprouts, mushrooms & tofu with rice (recipe from Plenty)

Wednesday:

Lentil tacos

Thursday:

Macaroni and cheese (with cashew ‘cheese’ sauce) and broccoli

Friday:

Lentil, quinoa, pecan burgers, sweet potato fries and spinach salad
